Crunchy SuperSeed Quinoa Buddha Bowl

  • ½ cup uncooked quinoa

    ½ cup cooked chickpeas (or tinned)

    1 small cucumber, diced

    1 medium carrot, grated

    3 big spinach leaves, chopped

    4 sprigs of rocket, chopped

    15 black olives

    1 x 30g single packet of NuSeed Original Seeds

    1 tsp hemp seeds

    1 tsp chia seeds

    Salt & pepper

    3 tbsp olive oil

    ½ tsp chilli

    1 tsp cumin

    1 tsp paprika

    Squeeze of fresh lemon juice

  • Step 1Prepare Quinoa according to the cooking instructions on the packet

    Step 2Combine salt, pepper, cumin, paprika and a touch of chilli with olive oil and pour over chickpeas and let them stand

    Step 3Fluff up cooked Quinoa with a fork once ready and place a healthy portion in the centre of the bowl.

    Step 4Add olives, cucumber, mix of raw spinach and rocket, chickpeas (retain oil), packet of NuSeeds and grated carrot around the Quinoa

    Step 5Top the Quinoa with hemp seeds and the cucumber with chia seeds

    Step 6Pour the oil dressing over the ingredients and finish with a squeeze of fresh lemon juice. A Tahini dressing would also work well with this dish.
